Gluten-Free Pumpkin Streusel Muffins

Pumpkin Muffin Ingredients

  • 1 1/2 cups gluten-free flour
  • 2 tsp cinnamon
  • 2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1/2 cup butter
  • 1 cup brown sugar
  • 2 eggs
  • 1/2 cup pumpkin puree
  • 1/2 cup plain Greek yogurt

Streusel Ingredients

  • 1/3 cup gluten-free flour
  • 1/2 cup brown sugar
  • 1 tsp cinnamon
  • 1/4 tsp salt
  • 5 tbsp butter (room temp)

Glaze Ingredients

  • 1/2 cup powdered sugar
  • 1 tsp milk
  • 1/2 tsp vanilla extract

Directions

  1. Preheat oven to 350.
  2. In small bowl, combine streusel ingredients. Set aside.
  3. In medium mixing bowl, combine dry muffin ingredients. Mix.
  4. Add all remaining ingredients except pumpkin and mix well.
  5. Add pumpkin and mix until combined.
  6. Line cupcake tin with cupcake papers.
  7. Fill each cup 3/4 full.
  8. Top each muffin with 1 spoonful of streusel topping.
  9. Using a toothpick, gently swirl streusel into the top of the muffin.
  10. Bake for 13-15 minutes.
  11. Remove from oven and cool on a wire rack.
  12. Once cooled, mix glaze and top muffins with a swirl of glaze.
