Gluten-Free Lemon Donuts

Donut Ingredients

  • 1 3/4 cups gluten-free flour
  • 1/4 cup cornstarch
  • 3/4 cup sugar
  • 2 tsp baking soda
  • 1 tsp salt
  • 3/4 cup buttermilk
  • 2 eggs
  • 2 tbsp butter
  • 1 tbsp lemon juice
  • 1/2 tsp vanilla

Coating Ingredients

  • 1/2 cup white sugar
  • 1 tsp lemon juice
  • 6 tbsp melted butter

Directions

  1. Preheat oven to 425.
  2. In large bowl, combine all ingredients and mix until smooth.
  3. Pour batter into greased donut pan.
  4. Bake for 6-8 minutes.
  5. Remove from oven and let cool for 5 minutes.
  6. Mix butter and lemon juice together for coating.
  7. Dip donut in lemon butter mixture and then immediately roll in sugar.
