Steph’s Loaded Potato Salad


  • 5 lbs red potatoes
  • 2 cups sour cream
  • 1/2 cup olive oil mayo
  • 1/2 cup ranch dressing
  • 1/4 cup chives
  • 16 oz shredded cheddar cheese
  • 1 lb bacon (cooked and chopped)


  1. Boil large pot of water.
  2. Wash, peel and dice red potatoes.
  3. Boil potatoes for 10 mins.
  4. Drain potatoes and cool under cold water.
  5. In large mixing bowl, combine all other ingredients.
  6. Once potatoes are completely cool, combine all ingredients.
  7. Mix well with wooden spoon or hands.
  8. Cover with clear plastic wrap and refrigerate.
  9. Serve cold.
